Cooking well-rounded healthy meals on a budget can be hard to learn how to do. Let Kacie help. This was a staple meal she made when she was on a TIGHT budget. Make some taco casserole and listen to Kacie share her best tips for stretching your dollar! Need: greased baking dish Ingredients: 1 can of black beans 1 lb of ground beef 1 pack of corn or four tortillas (flour rolls better, but corn is healthier) 1 can of corn 2 diced jalapeños 2 diced large tomatoes (or 1 can of diced tomatoes with green chilis!) 1 cup of shredded lettuce or spinach 2 tsp chili powder 2 tsp of meat tenderizer salt pepper Optional: Taco seasoning 1 cup of cheddar cheese ½ of pepper –jack cheese ½ greek yogurt 2 tsp garlic powder 1-2 tbsp parsley
