Synopsis

In each episode, I'll break down a recipe, discuss what's on my mind, and try to navigate what it means to be human today. I want to take my experiences, utilize them to further discuss the issue of the othering between those who are neuro-typical and those who are differently abled. Being able to discuss and create a space for neuro-diversity on a podcast opens a plethora of doors for mental and invisible illnesses to be highlighted and increase awareness of the complexity of the human condition.     In this episode I'm breaking down the basics of a chocolate chip cookie - how to jazz it up or dress it down. I also discuss depression, mental health, and what the notion of a "mental health crisis" means to me.  ___________________________________ Recipe for Chocolate Chip Cookies: 4.5 cups of flour 1.5 cups of sugar 1.5 cups of dark brown sugar 1 teaspoon baking soda 1 teaspoon salt 1 heaping teaspoon espresso powder 1 tablespoon vanilla extract 1 teaspoon almond extract 2 eggs (room temperature) 4.5 sticks of butter, unsalted (room temperature) 4oz regular sized chocolate chips (semi-sweet) 24oz mini chocolate chips (semi-sweet) ___________________________________ Pre-heat oven to 350. Combine all dry ingredients (Except chips) and extracts.  Add in butter and mix with your hands until combined and "Crumbly" (like sand, panko, or dirt) in appearance.  Add in egg and chocolate chips at the same time, and combine until a dough is formed.  Chill for 15 min or overnight, then scoop into 1.
